I am all about quick and easy meals, this one you can make as simple as you like or you can fancy it up a bit by adding extra vegetables (or chicken ) and serving it with coconut rice, but you really don't need much to create this lemony goodness.
1 large potato per person,
1 carrot per person
1/2 tin of chickpeas per person
a few spoonfuls of coconut cream,
oh and our Lemon Yassa of course!
This version I just cube potatoes and carrots (small so they cook quickly) and in a frypan with a few drops of oil, brown slightly then add 1 cup of water, 4 desert spoons of Lemon Yassa place the lid on the frypan until the veggies are tender, add coconut cream to taste and serve on a bed of spinach or rice.
