Lemony goodness
I am all about quick and easy meals, this one you can make as simple as you like or you can fancy it up a bit by adding extra vegetables (or chicken if you eat meat) and serving it with coconut rice, but you really don't need much to create this lemony goodness.
Serves 2
1 onion sliced (optional)
1 medium potato cubed
1 carrot sliced
1 small sweet potato cubed
11 cup of peas and corn mix
1 tin of chickpeas
Spinach, cous cous, coconut rice or cauliflower rice for serving.
a few spoonfuls of coconut cream or coconut yoghurt
1/2 jar Lemon Yassa of course!
Add the onion to a hot pan with a little oil and brown slightly, add all the veggies except the peas and corn and sear, add 1 cup of water, 1/2 jar Lemon Yassa and place the lid on the pan until veggies are almost cooked through. Add peas and corn and chickpeas and heat through until bubbling. Add a few spoons of coconut cream or yoghurt to taste and serve on spinach or your choice from the above.
