Left over Christmas Turkey Mole
If you are anything like me once Christmas day is over and you have a few days off (if you are lucky) you really want to have some easy meals to serve and to also make use of the leftovers in the fridge. I think this is a delicious lazy after Christmas day meal, or perhaps even something different to take to your boxing day party?
Left Over Christmas Turkey Mole
Ingredients:
1 x jar Mexican Mole'
500 - 800g of Cooked left over turkey meat, cut or torn into bite size pieces (don't be to fussy with this)
In a saucepan, fry pan with lid add a dash of extra virgin olive oil, let heat then add all the turkey meat and let it start to brown a little.
Then add the jar of Mexican Mole' and 1/2 to 1 cup of chicken stock depending on desired consistancy, pop the lid on and let simmer for at least 15 mins until the turkey is heated through and mole darkens.
Serve with Mexican Rice and fresh tortilla's or crusty bread.
Note:
If you would like to serve this Turkey Mole at a barbeque use less stock and make a slightly thicker consistancy, serve with tortilla's cooked on the barbeque and with my Left Over Mexican Rice Salad
